Mini Pizzas? Don't mind if I do....

     I love Betty Crocker, and I really love her Simple Pizza Crust Mix. I just have to add water! It's final week here at good old college and I have been trying to empty my cupboard of food when I came across this fun little package.




    Initially I was going to use the pizza crust to have a fun double/ triple date with my roommate (I have the cutest mini-personal pizza plans), but college it gets busy. Would have been fun though. :) So back to my pizza endeavors, I love personalizing pizza and eating just what I want on them. Which isn't very much since I am so picky. I like to use Pepperoni, Prego Marinara sauce and  pizza mix cheese. I followed the directions on the back of the crust except: I cooked just the crust for 8 mins, pulled them out covered them with topping and stuck them back in for 3-4 minutes.


Here they are all yummy and delicious looking. The packet made about 2 crusts for me, the first one that I did was a little thin and the section was just perfect so I have enough left over to make a even tinier version. :)

A Twist on Banana Bread

Never fail, I buy bananas at the store thinking I will eat them and they end up sitting on my shelf for a week and a half untouched. Finally I realize that they are getting browner and I think about eating them, but I don't. So... usually I end up making banana bread out of them. Today I decided to spice it up a little and bake it with Reese's Peanut Butter Cups. I got the idea while on Pinterest on day at work. Cooks and Cups a great food blog is where I got the recipe.

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup peanut butter
  • 1/4 cup oil
  • 1 egg
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1 1/2 baking powder
  • 1/2 tsp salt
  • 8 oz bag of Reese's mini cups

Directions

  1. Preheat oven to 350 degree
  2. Grease your loaf pan (I used an 8 x 4 pan) with Pam
  3. In a medium bowl whisk together flour, baking soda, baking powder and salt, set aside.
  4. In a large bowl stir together bananas, peanut butter, oil, egg and sugars.
  5. Pour dry ingredients into wet ingredients and stir until just combined. batter will be lumpy.
  6. Fold in Reese's mini cups and spread batter into prepared pan.
  7. Bake for about 1 hour or until toothpick inserted into center comes out clean.
  8. Let cool in pan for 10 minutes, then loosen the edges of the pan with a knife and remove form loaf pan, transferring bread to a cooling rack.

Just A Bit of Sweet

I like every girl I know, well besides my roommate, but she doesn't count, loves chocolate and everyone of us needs a bit now and then. So... alone I sat tonight with a few hours to spare and no roommates around. After making myself some yummy "Pot of Gold," a delicious all-in-one dinner I will have to share with you sometime, I sat around for a few minutes wishing I had bought me some chocolate when I went to the store last. : (



Then I remembered something I had seen on Pinterest at work today, Two-Minute Mug Brownie! I was so excited. This brownie fit the spot. Although next time I thing that I would make this in two ramekins. One is almost too much, it is so rich.





Two-Minute Mug Brownie
1/4 cup flour
1/4 cup packed brown sugar
2 Tbsp unsweetened cocoa powder
Pinch Salt
2 Tbsp canola or other mild vegetable oil
2 Tbsp milk or water
In a heatproof mug or ramekin, stir together the dry ingredients until no lumps remain. Stir in the oil and milk until you have a thick paste.
Microwave on high for a minute, I microwaved min for 1min 15 sec, it's done when it's springy on top but still a bit gooey. Eat warm.

Strawberries and New Muffin Pans


Today after a quick nap and scrubbing my kitchen clean, I did what any "Baker" would do with strawberries, new muffin tin, Glee music playing and a couple of hours to spare, I make Strawberry Muffins.

For Christmas this year I asked my oldest brother and his wife for only 2 things really. Muffin/ cupcake pans and a ice cream scoop. You may be asking what one had to do with the other, if anything at all. Well I love to use an ice cream scoop to get the perfect amount of batter for muffins every time.

When I went home from college and saw the present under the Christmas tree with my name on it, I just knew I was going to have the best Christmas ever. What I didn't know was how much under that tree was really mine. Needless to say my brother spoiled me.

I know have anything I would ever need to make about 100 cupcakes with no problem. So today I thought I'd better put my presents to good use. I have been researching. Yes researching, muffins and cupcake recipes the other day I came across one for strawberry muffins of muffinrecipes.net.

Well today I had strawberries....

Strawberry Muffins

Ingredients list:


2 ½ cups of fresh strawberries, rinsed, hulled and sliced.
4 medium eggs, beaten.
1 cup of vegetable oil.


2 cups of sugar.
3 cups of all-purpose flour.
1 tablespoon of cinnamon.
1 teaspoon of baking soda.
1 teaspoon of salt.

Instructions:

1.Preheat your oven to 400°F (210°C).
2.Lightly coat full-size muffin tins with non-stick cooking spray or place in baking cups.
3.In a suitably sized bowl, combine the flour, sugar, cinnamon, baking soda, and salt.
4.In a another bowl, combine the eggs, strawberries and the vegetable oil.
5.Mix the contents of the two bowls together.
6.Gently fold in the chopped walnuts.
7.Fill the muffin tins about two-thirds full and bake for 15 minutes.
8.Allow to cool.

Hello

I'm a "Baker" I love baking, cooking and of course eating. I have started this blog to document my journey this year, my journey of growing my recipe book. I am a very picky eater, although my roommate might be giving me some competition for the top spot.

Recently I started a job on campus where I sit in front of a computer all day, with nothing to do. One of the girls I work with suggested that I get a stumbleupon account. Next thing I knew I was addicted, and my favorite part was all the delicious recopies that I "stumbled upon." I began growing a favorites list full of recipes that I wanted to try. I'm currently taking a business communications class, and one of the assignment was to start a business blog. That got me interested into all of the blogs, especially the food blogs. So here I am starting my own "food blog" or as I like to call it my attempt at a food blog.

I will be testing out the recipes I have found online, both from blogs as well as food websites. Unlike most blogs I won't just be blogging about the recipes, but I'll be sharing all the gory details. The recipes that went wrong, and the recipes that I just didn't like.
