I like every girl I know, well besides my roommate, but she doesn't count, loves chocolate and everyone of us needs a bit now and then. So... alone I sat tonight with a few hours to spare and no roommates around. After making myself some yummy "Pot of Gold," a delicious all-in-one dinner I will have to share with you sometime, I sat around for a few minutes wishing I had bought me some chocolate when I went to the store last. : (
Then I remembered something I had seen on Pinterest at work today, Two-Minute Mug Brownie! I was so excited. This brownie fit the spot. Although next time I thing that I would make this in two ramekins. One is almost too much, it is so rich.
Two-Minute Mug Brownie
1/4 cup flour
1/4 cup packed brown sugar
2 Tbsp unsweetened cocoa powder
Pinch Salt
2 Tbsp canola or other mild vegetable oil
2 Tbsp milk or water
In a heatproof mug or ramekin, stir together the dry ingredients until no lumps remain. Stir in the oil and milk until you have a thick paste.
Microwave on high for a minute, I microwaved min for 1min 15 sec, it's done when it's springy on top but still a bit gooey. Eat warm.
