Today after a quick nap and scrubbing my kitchen clean, I did what any "Baker" would do with strawberries, new muffin tin, Glee music playing and a couple of hours to spare, I make Strawberry Muffins.
For Christmas this year I asked my oldest brother and his wife for only 2 things really. Muffin/ cupcake pans and a ice cream scoop. You may be asking what one had to do with the other, if anything at all. Well I love to use an ice cream scoop to get the perfect amount of batter for muffins every time.
When I went home from college and saw the present under the Christmas tree with my name on it, I just knew I was going to have the best Christmas ever. What I didn't know was how much under that tree was really mine. Needless to say my brother spoiled me.
I know have anything I would ever need to make about 100 cupcakes with no problem. So today I thought I'd better put my presents to good use. I have been researching. Yes researching, muffins and cupcake recipes the other day I came across one for strawberry muffins of muffinrecipes.net.
Well today I had strawberries....
Strawberry Muffins
Ingredients list:
2 ½ cups of fresh strawberries, rinsed, hulled and sliced.
4 medium eggs, beaten.
1 cup of vegetable oil.
2 cups of sugar.
3 cups of all-purpose flour.
1 tablespoon of cinnamon.
1 teaspoon of baking soda.
1 teaspoon of salt.
Instructions:
1.Preheat your oven to 400°F (210°C).
2.Lightly coat full-size muffin tins with non-stick cooking spray or place in baking cups.
3.In a suitably sized bowl, combine the flour, sugar, cinnamon, baking soda, and salt.
4.In a another bowl, combine the eggs, strawberries and the vegetable oil.
5.Mix the contents of the two bowls together.
6.Gently fold in the chopped walnuts.
7.Fill the muffin tins about two-thirds full and bake for 15 minutes.
8.Allow to cool.
